Chinese Chicken Salad with Honey-Peanut Dressing

This absolutely falls into the "What to make when you don't feel like making dinner" category.
I even used a store bought rotisserie chicken (gasp!) because, well, I really didn't feel like doing a damn thing involving the oven yesterday. I blame the crazy, unrelenting heat here in Phoenix. You're probably tired of my using that excuse and quite frankly I'm tired too. All of us Zonies deal with the triple scorching digits in our own way May through August but I gotta tell you, come mid September, I personally am spent. Done and down right cranky.

We didn't even get an honest to goodness Monsoon this year! This may not sound like a bad thing if you live in the mid-west or maybe in Japan.  Complaining about  not  getting 80+ mph winds and feet upon feet of rushing waters because the bone dry, compacted desert ground can't absorb it fast enough might sound crazy if you in fact did not live in the South Western deserts of Arizona. You must keep in mind that even the tall and mighty saguaro start looking parched and pathetic by the end of a summer were temperatures have been consistently averaging around 115F.  Every. Single. Day.

This salad was a welcomed treat for a weeknight dinner. The kiddos thought it "looked pretty" with all of the colors and loved the honey-peanut sauce which made the veggies "taste yummier".

This could very easily be made vegetarian by omitting the chicken. You would still have a lot of protein from the peanut sauce and the bean sprouts which are a wonderful source of protein. Also, you could use tahini (a sesame paste with a milder flavor than peanut) if you prefer.

The Crunch Factor in this salad makes it very filling. I used baby clementines instead of canned mandarin oranges this time because I had a big gab of them on the counter. I much preferred the fresh taste but the little seeds in them were annoying to pick out in each bite especially with all of the other crunchiness going on.

 juice from the mandarin oranges
tablespoon at a time of warm water to thin to desired consistency

PREP TIME  15 MINUTES        SERVES   6

INGREDIENTS

2 cups cooked chicken, chopped
1/2 head Napa cabbage, chopped
1 large handful fresh bean sprouts
1 red bell pepper cut in strips
1 bunch green onions, chopped
handful of packaged julienned carrots
1/4 cup cilantro, chopped
small handful of chopped peanuts
1 can mandarin oranges, reserve juice

1 tablespoon (no added sugar) peanut butter (or tahini)
1tablespoon local, Organic honey
1tablespoon tamari

Putting it all together

In a large bowl combine all veggies and toss together.
Add chopped chicken and toss.
In a small bowl, whisk together the peanut butter, honey, soy sauce juice and water.
Drizzle the sauce over the salad and sprinkle with nuts.

Sweet and Smokey Slow Cooked Garbanzo Beans on Flax Seed Crepes and a Set of Spices and Flavored Salt from Gourmet Nut Give Away!

Nothing beats a slow cooked dish that makes your mouth water from the sweet and smokey flavors wafting through your home all day. And when the flavors have soaked into your slowly cooked chicken and garbanzo beans and you can finally spoon the contents from your slow cooker and place them in a super healthy, simple home made wrap, you are basically giddy with joy. Pure bliss I tell you.

Sure you could throw the onion into the slow cooker and cook it all day with the rest of the stuff, but I have a strange affection for searing my onions until they are beautifully browned.  I could eat them by the spoonful that way.

The fine people from Gourmet Nut sent me a nice goodie box filled with their trail mixes, power snacks  and some pink and smoked sea salts to try. They also sent me some of their different spices/rubs to hang out with. We were more than eager to try out the Coffee Steak Rub on our T-Bones and I massaged my fillet Mignon with the Sweet and Smokey Steak Rub.

Mouth watering, sweet Heaven coming from our grill.

I was quickly addicted to the Sweet and Smokey rub and had to come up with a weekday dish other than steak which we only eat on rare occasion. So when I saw these tacos using smoked paprika over at Family Style Food I immediately knew what I had to do.

Crazy simple and insanely delicious, even picky eaters 2 and 4 loved these!  You can easily make these vegetarian/vegan by omitting the chicken but I knew my little guys would be more willing to eat them with just a bit of chicken in them.

Gourmet Nut is going to give away a Set of their spices and flavored salts to not one but THREE lucky Simply Healthy Family readers!

Please visit Gourmet Nut and tell me which spices or salts are your fav and what you would make with them! This isn't mandatory but I am interested at all of the possibilities with their range of
salts and spices!

Flax seed Wraps

1/3 cup flax meal (ground flax seeds)

Chiarezza Parfait and a giveaway!

More often than not these days I have negative zero interest in preparing breakfast at all, especially one that takes any sort of preparation. I've been sticking to my Shakeology concoctions on the days I work but like a variety in my diet and a sit down breakfast on my days off.

Chiarezza sent me some of their cereals to review and I couldn't be more impressed. Not only was it delicious, it's as simple to prepare as heating some of my almond vanilla milk, pouring a bit of the cereal into the bowl, stir, wait, eat. Perfect.

The bits of Organic dried fruit gave it the perfect amount of sweetness and the texture was surprisingly thick and creamy. Chia seeds expand the longer you let them sit in liquid and so the consistency is up to you. Any liquid will do, water or your favorite milk product. I like coconut milk, almond milk and hemp milk.

Add some fresh fruit and you have a beautiful and healthy breakfast to fuel you for hours.

A completely revolutionary way to have cereal, Chiarezza’s all Organic cereal is an exceptional way to start your day. It is free of so many unnecessary filler ingredients. After you eat this, you’ll never go back to eating “regular old” cereal again.

The base is made from all Organic dried fruits and seeds so you start your day like a Superstar without crashing like yesterday’s one hit wonder.

Chiarezza is giving away a full size bag of their Forbidden Fruit cereal to one lucky
Simply Healthy Family fan.

You can eat this completely raw by adding cold water, or you can add hot water or milk (whichever kind you like). Each pouch contains 8 servings. If you’re wondering how that can be, it’s because the ingredients are filling and powerful. The chia seeds will expand and it’s ready in 5-7 minutes after adding liquid.

Raw. Wheat Free. Dairy Free. Tree nut free. Peanut free. Dairy Free. Egg. Free. Soy Free.

Ingredients: Organic chia seeds, organic hemp seeds, organic mango, organic buckwheat, organic banana flakes, organic goji berries.

Cheesy Cauliflower Crust Pizza with Prosciutto and Roasted Garlic {gluten free}

It takes a good, solid year to get moved and settled into a new house. This, is a fact.... otherwise known as my opinion. We have been living in our current house AKA the crappy rental for almost a year and I finally found a good place to store the ginormous magnifying glass from Pottery Barn and hung the last 3 pictures in our bedroom. Mind you I have absolutely no idea where half of my belongings are. You see, part of the curse of being a procrastinator is that you wait until the day of moving to pack things that you never knew you even had in the first place. Things you never even used one single time like your kitchen scale which you have now decided that you can't live without.

Not worth killing yourself over a kitchen scale by climbing mountains of haphazardly stacked boxes topped with over sized Christmas wreaths and luggage. The arrangement my husband assured me was only temporary 10 months ago.

What is driving me batty is not remembering exactly what camping gear we do or do not have because when we lived in our old house we had 4 children, 3 of them under the age of 7 and 1 in diapers until after we moved. Not exactly the scenario I would paint for a fun camping trip. Wait. Did I just say camping could be fun? Well, we're going this weekend and have no idea where half our gear is.

Camping with 4 kids = Not always so much fun.

Simple home made pizza with negative zero guilt = My idea of fun!

Amen!

Believe me when I tell you that this pizza crust is delicious, thin and remarkable crispy yet slightly soft and chewy with notes of Italian herbs, spices and freshly grated Parmesan and mozzarella in every bite.

Your "dough" will be slightly crumbly but will hold together nicely
by the egg and cheeses.

Mix the 'dough' together with your hands until combined then shape into a ball and place on a square of parchment paper. Using your hands, flatten out into a circle about 1/4" thick. The thicker you make it the longer it will take to cook. Look how nicely it forms.

While you are preparing the cauliflower 'dough' place a pizza stone (or baking sheet)  in an oven pre-heated to 450F. on the lower rack.

Carefully slide the dough and parchment onto the pre-heated stone.
Bake 20-25 minutes until the crust is golden brown and crispy around the edges.

Remove stone from oven, place on a cooling rack and top with your choice of toppings! The possibilities are endless of course. I used one of my all time favorite combos, roasted garlic and prosciutto with fresh pizza sauce and lots of fresh Italian cheeses. I made the boys a cheeseburger pizza.

You Will Need:

1 medium sized cauliflower
1/4 cup mozzarella or Italian cheese blend plus more for topping if desired
1/4 cup Parmesan Cheese, freshly grated is best
1 jar prepared pizza sauce or home made (recipe below)
1 medium egg (Organic & free range of course :)
1/2 tablespoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried thyme
1 teaspoon garlic powder
1/2 teaspoon salt
cracked black pepper or red pepper flakes to taste (I use 1/2 teaspoon red pepper flakes)

Toppings of your desire.

Wash cauliflower well and dry. Cut off leaves and stems. Break into florets.

Place into a large food processor (I don't have one, I used my Vitamix. If you do this I suggest putting in half at a time.)  PULSE several times until you have a 'powdery' texture. Don't over blend, you'll have mush.

Scrape into a microwave safe bowl. Microwave for 2 minutes on regular power. (I've skipped this
step before and it turned out fine, slightly soggier but fine)
Carefully remove from microwave and let sit for a couple of minutes.
Dump cauliflower onto the middle of a kitchen towel and fold lengthwise into thirds.
Now, wring the heck out of it getting out as much liquid as you possibly can. I typically get just less than a cup! The more liquid you get out, the crispier your crust will be i.e. more toppings!

Place cauliflower back into bowl. add herbs, spices, salt and cheeses. Mix well with your hands.
Now add egg. Mix to combine. Make into a ball and place onto a square of parchment paper.
Using your hands, shape into a circle 1/4" thick.

Carefully slide the parchment paper and cauliflower crust onto your pre-heated stone.
Bake at 450F for 20-25 minutes (checking after 15 minutes as oven times vary).
When crust is golden brown and crispy around the edges remove from oven.

Top with your favorite pizza toppings and pop back into the oven for 5-10 minutes until warmed through.

Enjoy!!!

Protein Packed Banana Sunflower Cookies gluten and sugar free

My baby is going to be 4 years old in a few weeks. I suppose that means I can officially no longer use the excuse that I am still trying to loose the baby fat. What's that you say? Most people say it only takes 6 months to a year at most to lose the weight after having a baby. Well then, I guess I better find another excuse for hanging onto the chubs like being almost 40=slow metabolism, being constantly busy with 4 kids and work.......

Alright, alright. Excuses suck and they don't create results so I'll  just have to suck it up and take matters into my own hands. Step it up a notch. Or two.

My chubby tummy is really starting to get on my nerves. The chubs have gots to go! I have been telling myself for almost 4 years, since aforementioned baby numero 4 that I will not buy new clothes until I lose at least 20lbs. 30 would be super.

The fact that my wardrobe is seriously out of style should tell you something. It's been way too long just waiting for the weight to come off. After I had my first 3 children I worked out once and a while, a few times a week usually hiking or playing tennis and sometimes home workouts when it was too hot outside. The wight came off fairly easily. So what happened after baby #4? This belly won't budge!

Taking matters into my own hands I decided to join a workout program along with a month of Shakeology with my long time fellow blogger and inspirational friend Jen aka The Fit Housewife.
I'm so excited to get started! My package should be on the doorstep any day now and I'll be on a 90 kick ass jump start to the new me with Chalean Extreme.

Getting motivated to workout isn't easy for me. Usually I have to tell myself to at the very least do a Yoga or 20 minutes of Pilates and after I do I'm energized and ready to kick it into gear with a tougher workout. Cute new workout clothes also are a great motivator so when Marni from ZUMBA Fitness offered to send me some of their new apparel I was more than happy to check it out.

I recieved this cute tank top which I loved! It wans't clingy which helps hide the tummy while I try to get rid of it. I really liked how airy it was, I hate when my clothes stay wet when I sweat.

These sports bras would look great under their open back tanks!

I like the sassy edgy quality of Zumba's line of comfortable workout clothes.

Sporting my cute, new workout clothes and stocked with these healthy,
protein packed pre-workout cookies I'm ready to get my cardio on!

These banana sunflower cookies taste like banana bread, my favorite!
Sweetened with a touch of honey and a handful of shredded coconut and made with
good for you gluten free flours minus the starch. I'm in love.

Oil free, butter free, refined sugar free, grain free. These still tasted wonderful. They have a cake like texture and the sunflower seeds added just the right amount of texture and heartiness, not to mention tons of beneficial vitamins and protein.

PREP TIME    10 MIN
BAKE TIME    10 MIN
YIELDS    16-20 COOKIES

Ingredients

3 ripe bananas
1/2 cup plain, fat free yogurt (or sugar free applesauce)
1/4 cup honey preferably local Organic, aides w allergies (eye it)
1/4 cup shredded, unsweetened coconut (or more honey)
1 cup spelt flour
1 cup buckwheat flour (or almond flour)
1 cup shelled, unsalted sunflower seeds
1 tablespoon baking powder
1 teaspoon baking soda
1/4 teaspoon iodized salt

Directions

Preheat the oven to 350°F. Coat a baking sheet with cooking spray.

In a large bowl, use an electric mixer on medium speed to cream together the bananas, yogurt and honey for 1 minute.

In a separate bowl, mix the flour with the sunflower seeds, baking powder, and baking soda. Add the flour mixture to the banana mixture along with coconut. Mix thoroughly to combine.
Drop rounded tablespoons of the dough onto the baking sheet, placing them about 2" apart. Bake for 10-12 minutes, or until the edges are golden brown.

Sunflower seeds are an excellent source of Vitamin E,
the body's primary fat-soluble antioxidant. Vitamin E travels throughout the body neutralizing free radicals which can reduce
 the
symptoms of asthma, osteoarthritis and rheumatoid arthritis, conditions where
free radicals and inflammation play a big role.
The minerals and vitamins in sunflower seeds also can greatly help reduce the severity of asthma, lower high blood pressure, and prevent migraine headaches, as well as reducing the risk of heart attack and stroke.

Coconut Crusted Baked Chicken Strips {gluten free}

I remember when I was in college I thought grabbing some chicken fingers at Wendy's was a healthier choice than grabbing a cheeseburger, I mean no bread right? Wrong, duh me. I'm not going to lie, I still love a good, crispy chicken nugget but avoid the drive through like crazy nowadays. It's a good thing, a very, very good thing that home made chicken nuggets happen to be one of the very easiest things you can make. Yippee!

Anyone can make these even if you don't like to cook or it's not really your thing. This is one of my "go to" weeknight simple dinners. I'm bored to death with plain baked chicken not to mention the whole humane issue with eating cooped up chickens. Of course eating Organic & cage free chicken gets pricey when feeding a family of 6 so we don't have it very often.

These would be a perfect appetizer at a party!

When we do I make sure it's gonna be tasty and serve it up with lots of fruits and veggies. In this case, an amazingly sweet and creamy mango yogurt dipping sauce! I could have eaten it by the spoonful. Not ashamed.

One of my nutty kids doesn't like coconut (the shame) but the rest of us loved these sweet and crunchy chicken tenders and were more than happy to swipe Jack's chicken nuggets right of his plate. Ya gotta be quick around this joint when it comes to protecting your food and making sure you get the very last chicken nugget from the pan.

6-8 pieces chicken tenderloins (preferably Organic free range)
11/2 cups almond or other nut flour
1 1/2 cups unsweetened shredded coconut
4 eggs, beaten
2 tablespoons milk (dairy free if possible)
salt and pepper
1 tablespoon oil for coating pan

2 ripe mango's + 1/2 cup yogurt = mango dipping sauce

peel mango and slice fruit away from pit. Discard pit, place fruit into blender or food processor. Add yogurt, blend.

Preheat oven to 400F
Arrange 3 deep plates on counter. Add flour to one,  beaten eggs to the second and coconut to the third.
Working one at a time, place chicken tenders into flour and dredge on both sides to coat. Using your other hand, dip coated chicken into egg to coat. Next, lay chicken in coconut and dredge to coat, flip, coat other side.
Place on a lightly oiled pan or one lined with parchment.
Continue to do this to remaining chicken.
TIP
Only put half of the flour and half of the coconut onto plates as they will become gooey.
Half way through your chicken, quickly rinse off plates if needed and dry.
Add remaining flour to one plate and remaining coconut to the other.
Cook at 400F for 4-5 minutes. Using tongs, carefully flip the chicken pieces over.
Cook an additional 5-6 minutes until golden brown.
Don't over cook chicken as it will become dry and taste like cardboard.

Enjoy!

Cottage Cheese Pancakes {gluten free}

I think these pancakes could fall under the paleo diet guidelines.  Wait, did cavemen eat cottage cheese? Oh well,  I'm pretty sure that cave men ate pancakes. After all they apparently ate muffins, cookies and pie why not pancakes. O.k. so I haven't read up on this new fad. I know it's a pretty basic concept of eating whole foods but as far as trying to figure out exactly what cavemen ate, I'm not sure I really get it. Like coconut for instance? Did cave men eat coconut? Maybe if there were cave men in Hawaii. Coconut is good for you but if cave men didn't eat it then are Paleoians not allowed to eat it either? Why?

These are the random things I think about when I am stalling cleaning the house. I'll bet cave men didn't have to clean their houses errr caves.  The closest to living like a cave man that I get is living with 4 crazy kids running around the house like little neanderthals.

Honestly. Not sure what got me on this subject. Just seeing an awful lot of Paleo recipes out there in the blogosphere. Paleo must be the new gluten free. I'm sure there's some great science behind it.

At any rate, in an effort to reduce our intake of processed carbs/sugars and limit GMO foods in our bodies I have been trying to remake some of our favorite foods without white or wheat flour.

These pancakes turned out to be super easy and tasted great without the wheat flour. Score! Dare I say,
"So easy a caveman can do it!"

Sorry. Had to.

My mom used to make cottage cheese pancakes for us when we were little. We all loved them. Substituting almond and coconut flour for regular flour adds protein and vitamins.
Bye Bye wheat belly!

If your thinking cottage cheese sounds really weird in pancakes let me tell you, it's amazing! The pancakes turn out moist and the cottage cheese somehow gets sweet when cooked and tastes very similar to a cream cheese crepe IMO.

Topped with strawberries for extra sweetness and these pancakes will be your new
favorite healthy breakfast I promise!

*NOTES  I also have used 1 cup spelt flour in place of the almond and coconut flour. Spelt flour is not certified GF but it is a nutritious ancient grain with a deep nut like flavor. Spelt dates back long before many wheat hybrids. Many of its benefits come from the fact that it offers a broader spectrum of nutrients compared to many of its more inbred cousins in the wheat family. It can be used in many of the same ways as wheat including bread and pasta making. Spelt does not seem to cause sensitivities in many people who are intolerant of wheat.
