South Western Style Eggs Benedict with Creamy Avocado Hollandaise

Eggs Benedict has always and will always be my favorite breakfast. I'll never forget the very first time I had it in a little cafe in the Lamplight district in San Fransisco. It was the most indulgent breakfast I'd ever had and I was surprised at how much I looooved the warm, oozy yolk as it drizzled out of the egg and soaked into the toast. I have never been a fan of eggs in general and still don't care for boiled eggs or scrambled eggs unless made my way (pushed to the center of the pan till just cooked and with veggies).

After this life changing breakfast in San Fransisco I did duly note how heavy my tummy felt and the slight but noticeable 'icky' feeling I get whenever I eat something that is loaded with fat. I came up with a much lighter version many years ago and have made it so many times now that it's my go to weekend breakfast or brunch.

My simple starter Hollandaise is fat free by using plain, fat free Greek yogurt instead of mayo and egg and has plenty of 'bang for your buck' flavors going on.

By adding half of a California avocado you'll get an even creamier texture, added flavor and super good for you fatty acids and vitamins.

To make the Hollandaise sauce appealing to the spice lovers palate, add 1/2 of a minced jalapeno and a dash of Spanish paprika or chili powder.

TIME  10 MINUTES        SERVES    4
Ingredients:

4 Organic, free range eggs
4 slices Canadian bacon
1/2 California Avocado
4 slices Ezekiel sprouted bread or English muffin
1/2 jalapeño, minced
dash Spanish paprika or chili powder
1/3 cup plain, fat free Greek yogurt
2-3 tablespoons whole grain Dijon mustard
dash of soy sauce or tamari
squeeze of lemon juice
1 teaspoon spice mix ~ make enough to save in a small jar for future use.
(equal parts: ground cumin, garlic powder, curry powder, turmeric, black pepper, cayenne powder)

In a small food processor, mix together avocado, yogurt, Dijon, tamari, lemon and 1 teaspoon of the spice mix. Blend till smooth. You may need to add a tablespoon of water to desired consistency. Add the minced jalapeno and pulse a few times.

In a small pan add enough water to 1- 1/2" depth. Heat over medium-high heat till just  starts to boil.
Gently crack eggs, one at a time and slowly drop into water. Reduce heat to medium to maintain a very gentle boil. Cook eggs exactly 3 minutes. Using a slotted spoon, carefully remove eggs and place onto toasted bread with a slice of Canadian bacon (I like mine heated on a cast iron skillet).

Spoon the sauce over the the egg and bacon. Sprinkle with Spanish paprika and serve immediately.

Notes: Serve with mango, grapes, grapefruit or your favorite fruit.

Sweet and Smokey Slow Cooked Garbanzo Beans on Flax Seed Crepes and a Set of Spices and Flavored Salt from Gourmet Nut Give Away!

Nothing beats a slow cooked dish that makes your mouth water from the sweet and smokey flavors wafting through your home all day. And when the flavors have soaked into your slowly cooked chicken and garbanzo beans and you can finally spoon the contents from your slow cooker and place them in a super healthy, simple home made wrap, you are basically giddy with joy. Pure bliss I tell you.

Sure you could throw the onion into the slow cooker and cook it all day with the rest of the stuff, but I have a strange affection for searing my onions until they are beautifully browned.  I could eat them by the spoonful that way.

The fine people from Gourmet Nut sent me a nice goodie box filled with their trail mixes, power snacks  and some pink and smoked sea salts to try. They also sent me some of their different spices/rubs to hang out with. We were more than eager to try out the Coffee Steak Rub on our T-Bones and I massaged my fillet Mignon with the Sweet and Smokey Steak Rub.

Mouth watering, sweet Heaven coming from our grill.

I was quickly addicted to the Sweet and Smokey rub and had to come up with a weekday dish other than steak which we only eat on rare occasion. So when I saw these tacos using smoked paprika over at Family Style Food I immediately knew what I had to do.

Crazy simple and insanely delicious, even picky eaters 2 and 4 loved these!  You can easily make these vegetarian/vegan by omitting the chicken but I knew my little guys would be more willing to eat them with just a bit of chicken in them.

Gourmet Nut is going to give away a Set of their spices and flavored salts to not one but THREE lucky Simply Healthy Family readers!

Please visit Gourmet Nut and tell me which spices or salts are your fav and what you would make with them! This isn't mandatory but I am interested at all of the possibilities with their range of
salts and spices!

Black Bean and Cranberry Burgers with Chipotle Hummus

Who needs meat when these sweet and spicy burgers are just minutes from your kitchen table? Made from everyday pantry staples these burgers can be thrown together in minutes and will satisfy meat eaters and picky kids alike. My kids loved them (minus the spicy chipotle sauce).  I think that the dried cranberries, sweet corn and grated carrots are to credit with the fact that my kids gobbled them up right before my eyes.

I recreated this burger from one of my all time favorite places to eat, Pita Jungle. My husband won't go there with me so every so often I just so happen to find myself alone, stranded and starving  at the mall   in the middle of no where except for this lone Pita Jungle with a cute little patio and a fantastically healthy Mediterranean food selection, my fav.  Lucky me.

While I don't mind eating out by myself every once and a while, the bill even being solo can still add up. So in an effort to save money and because I realllllly crave these burgers quite often, I had to figure out how to make them for myself.

And I did.

Score!

Big time.

To satisfy your sweet tooth, have a few naturally sweet strawberries with your dinner instead of sugar laden cakes
or ice cream.

I honestly think I could give Pita Jungle a run for there money on these babies. They were totally right on the money..... even better IMHO, sorry Pita, no disrespect.

Paired with the chipotle hummus instead of fattening mayo and with a side of spring lettuce, bean sprouts and salt and pepper  Organic fingerling potatoes this is a perfect healthy meal. You will leave the table with your taste buds and belly satisfied, I promise!

Did You Know That Potatoes Can Help You Get A Good Nights Sleep?

When the sugars from potatoes enter the bloodstream, insulin surges, soaking up all amino acids except for tryptophan. This in turn becomes a fuel for serotonin, the neurotransmitter that produces melatonin. Melatonin is the amino acid that controls how drowsy we feel and regulates the sleep cycle.

For the best results, try eating potatoes 3 hours before bedtime.

Black Bean and Cranberry Burgers with Chipotle Hummus

These really are super easy! Don't be intimidated by the list of ingredients, in fact, I don't measure anything, I just eye it but I listed some general measurements for your convenience.

Ingredients:

2 cans black beans, drained
1 cup home made bread crumbs ( I use sprouted bread and pulse in my coffee grinder)
1 free range egg
1 cup frozen petite sweet corn
1/2 cup finely chopped bell or sweet peppers
2 cloves minced garlic
1/3 cup grated carrots
1/3 cup dried cranberries
1/2 teaspoon sea salt (I use Himalayan Pink or French Grey for the minerals)
1/2 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon turmeric (optional. I use for health benefits, doesn't have much flavor)

1 TBSP extra virgin olive oil
6 whole grain Kaiser buns

Condiments:
sliced tomatoes
sliced purple onion
lettuce
sprouts

For Chipotle Hummus:

1 cup plain or garlic hummus (home made or store bought)
1 6 oz. can of chipotle peppers in adobo sauce

Mix the hummus with a tablespoon or so of the adobe sauce (not the chipotle peppers). Reserve chipotles for another use.

Putting it all together:

In your coffee grinder or mini food processor, finely grind 2-3 pieces of sprouted or whole grain bread. Set out on a plate to dry out a bit while you put everything else together. TIP: I make a big batch of bread crumbs and freeze in a mason jar for convenience.

Pre-heat oven to 425F

In a large bowl, combine all ingredients, beans through turmeric.

Lightly oil a heavy baking pan such as a broiler pan. You can also fry these on a grill pan if you wish.

Using your hands, scoop a big handful of the bean mixture into a ball and then gently shape into a thick patty.
Place on oiled grill pan. Repeat until all of the mixture is gone.

Bake at 425F for 12-18 minutes until slightly crispy and hot.

Put burgers on kaiser buns spread with chipotle hummus and layered with freshly sliced tomatoes, onion, lettuce and sprouts.

If you are making potatoes as a side dish, rinse and dry potatoes. Drizzle with extra virgin olive oil, sprinkle with sea salt and cracked pepper to taste. Layer on a heavy baking dish {I use a stone baking dish} and bake with the burgers. You may need to put the potatoes in first depending on how big they are. Check with a fork for doneness.

Cran-Apple Millet Breakfast Bake

When you have 4 hungry kids at the breakfast table a box of cereal disappears in about 10 minutes flat. If we had cereal every morning I figure we would be spending about a million dollars a month on the stuff, not to mention all the sugar that comes in even the 'healthy' varieties.

I have been experimenting with whole grains like whole oatmeal, millet and quinoa for healthy and frugal breakfast alternatives. Millet is one of my favorite grains because it is one of the healthiest and simplest choices out there. Millet is a whole grain, complete protein, gluten free and contains the complete vitamin B complex and more of the amino acid lysine  than wheat, rice, oats or corn.

Millet's mild taste and soft texture make it an ideal choice for breakfast porridge's and bakes. You can simply throw it in a pot with (3-1 times) water and cook it for 20 minutes, add cinnamon, some nuts and dried fruit  or put it in your stone ware and add some of your favorite, seasonal fruits and slow bake it like I did here. Millet can also be put in your slow cooker and cooked overnight for an instant breakfast in the morning.

Cran-Apple Delight!

You Will Need:
1/2 cup Millet
1 1/3 cup water
1/2 teaspoon salt
1 TBSP Coconut Oil
1 cup whole, fresh or frozen cranberries
1 cup walnuts, chopped
2 Apples, unpeeled and chopped
2 TBSP  Coconut sugar
1/2 cup unsweetened applesauce
1 teaspoon cinnamon
1/4 teaspoon ground ginger

In a small sauce pot bring water to a boil. Add millet and salt, reduce heat and cover. Simmer for 15 minutes. Remove from heat and add remaining ingredients. Stir to combine.
Scoop into a ceramic baking dish and cover with a lid or foil.
Bake at 375F for 30 minutes. Remove foil and bake another 10-15 minutes till the top is golden brown.
Serve in cups with a dollop of cream if desired.  This goes well with a nice hot cup of herbal tea.
Enjoy not feeling heavy and over sweetened. This can be enjoyed for breakfast, brunch or even dessert.

Notes:

I boil the millet first to reduce baking time but if you wish you can skip this step and pour all ingredients into your baking dish and bake for 60-75 minutes covered, then 10 more minutes uncovered.

Millet is a very mild tasting grain so the spiced in this dish are important to amp up the taste bud pleasure experience.

The coconut oil is added to help prevent the porridge from sticking to the dish and more importantly for it's incredible health benefits.

Spiced Cranberry Chutney with Apricots, Cherries and Pecans

When did we as Americans (just my observation) start filling our tables and bellies with an assortment of fatty and sugary food for Thanksgiving?  Do we use the holiday as an excuse to over indulge? I do believe that all most things in moderation are fine but I would really like to see more real, whole foods on the holiday table. I love veggies but even if your not as excited about them as I am, there are so many delicious and new ways to try them that there's really no reason to load your plate with 3 different kinds of potatoes, stuffing and bread.

Fall produce is one of the healthiest and tastiest in my opinion and needs very little or no sugar or additives to make them a perfect holiday dinner addition. Take cranberries for example. Besides being gorgeous, they are a super power food for your health and yet most people buy the canned stuff and then pour sugar into them. Whole, fresh cranberries can be simply prepared or added to stuffing, squash, a salad or as a chutney.

Try making this cranberry, apricot and cherry chutney this year, it goes perfect with turkey and you can add it to your left over turkey sandwiches for a tangy twist! You can add diced apples too if you'd like. No sugar is needed but if you find it too tart, which I happen to love, add a teaspoon of  honey or turbinado/raw sugar to the cranberries as they cook.

Check back in the next day or two, I will be posting a simple and savory variation of green bean casserole.

Cranberry Chutney

1/2 cup apple cider
1/4 cup pomegranate juice
1-12 oz bag fresh or frozen cranberries
1/2 cup dried cherries or fresh chopped apples
1/2 cup dried apricots chopped
1/2 cup toasted pecans, chopped
2 tsps. orange zest
1/2 tsp ground cinnamon
1/4 tsp each ground fennel and ground cardamom
1/8 tsp each ground cloves and ground ginger
pinch of cayenne pepper!

Mix spices; bring cider, pom juice and spice blend to a gentle boil in a large saucepan. Add cranberries and return to a gentle boil. Cook until some of the cranberries just start to pop, 2-4 minutes. Remove from heat.

Meanwhile, mix dried cherries, apples if using, apricots, pecans and orange zest in a bowl. Add cooked cranberries and toss gently to coat. Cool and refrigerate until ready to use. Can be covered and refrigerated for a week.

A note on spices used in this recipe.

Fennel

Fennel Seed is a common herb used to promote good digestion and ease gas and bloating. This Mediterranean herb can also be found in many medicinal formulas designed to help ease women through monthly fluctuations. Fennel is also thought to help produce milk for nursing mothers.  Fennel is said to cure earache, toothache, asthma and rheumatism. It is meant to help stop hiccups and coughs, and improve eyesight. It has even been thought of as a good slimming agent. Fennel oil is used in cough medicine, liquorice sweets, perfumes and soaps.

Cardamom

Cardamom is a very intense and wonderful spice. If you haven't ever tried it I suggest you add it to your spice collection soon. Use it in this cranberry recipe, stuffing's, Indian and Mediterranean foods, give your Holiday cookies and cakes a wonderful exotic flavor, pairs well with orange flavor.

Cardamom is know for oral/gum health and a powerful antioxidant, especially when concerning the brain.
I thought this piece of information was very interesting and fun however.

Cardamom is also widely known as an aphrodisiac in the more mystic and esoteric circles of society. Love spells, love potions and general chemical concoctions having to do with romance, lust and attraction usually have cardamom as a component.

Pecan Crusted Sweet Potato-Salmon Cakes and a Give Away!

For those of you who were thinking that you were going to skip right on down to the give away part of this post,  I've got news for you....

You're just not allowed to. Furthermore, you'll be sorry if you do.
Why?  Because I said so. That's why.
That was said in my sternest 'mommy' voice just so ya know.

I'm really excited about this recipe and I truly hope you will try making this in your home. It's a keeper. We love salmon here and would eat it every single day if I could afford it. Salmon is so good for you especially if you choose wild and not the farmed a.k.a. "Fresh" or "Atlantic" varieties. When wild salmon isn't in season or if your budget is tight like mine is, canned salmon is a wonderful option. Again, just make sure your choosing wild salmon vs. farmed. How can you tell the difference? It should be labeled farmed somewhere on the packaging. A good rule of thumb is to choose salmon from Alaska or Canada.

You've probably already heard about Omega-3's and how essential they are to your health and well being. Alaskan salmon are a nutritional powerhouse, rich in protein, long chain Omega -3 fatty acids, Vitamin D, calcium, along with many other vitamins and minerals. You’d be hard-pressed to find a food more nutritious than Alaska salmon. Which may be why over 90% of Americans are deficient in Omega fatty acids.

Wild Alaska salmon are some of the richest sources of long-chain Omega-3 fatty acids.
The human body cannot manufacture it’s own omega-3’s, so it is from food that we must obtain them.
Omega-3’s are thought to provide substantial health benefits for people of all ages; providing a nutritional foundation for optimal heart, brain, mental, visual, immune system and pregnancy health.

O.K. onto the recipe because it is pretty awesome spectacular  a culinary piece of genius that should be honored for all of time and I know you're going to want to make it tonight for dinner.
Exaggerate? Who me? Not this time my friends, not this time.

I can't take all of the credit for this perfect dish. Pure Alaska Co. was nice enough to send me some cute recipe cards along with their salmon. One of the recipes was for this Wild Salmon Sweet Potato Cakes which I slightly altered and embellished a bit as I tend to do.  I can say with all honesty that this is the best tasting canned salmon by far that I have ever had, and mamma knows salmon.

Pure Alaska Salmon Co. practices sustainable fishing which is important on more levels than many of you you may be aware of.  I encourage you to visit their website which is informative and actually quite interesting. I really liked this quote found on their website.

"Most of us do not have time to be social activists, but in our food choices we have the ultimate and most powerful “vote”: our dollars — money talks."

O.K., o.k. here's the recipe. Geeesh! Now you can save the recipe and please, please do enter the give away!!! I love sharing the love.

A couple of tips:
  1. Remember not to use Olive oil for frying. It's not meant for high heat and will taste bitter and change the chemical make up making it unhealthy.
  2. I boil my sweet potatoes whole, with the skin ON for about 30 min. This helps retain the nutrients. I then cut the potato and throw it in my blender with the skin ON for added fiber.
  3. Do not discard the skin and bones from the salmon. They are choke full of vitamins and nutrients such as calcium and I SWEAR you will not notice them.
  4. Do not make cakes to big, they will fall apart. Do not cook on to high of heat, they will burn before they cook.

TIME 30 MINUTES        SERVES 6
Ingredients:

1 large sweet potato, roasted or boiled and mashed
3 – 7.5 oz cans Redhead and/or Thinkpink, drained
2-3 tablespoons grape seed oil (good fat, high heat tolerant)
½ cup red pepper, finely diced
½ cup sweet onion, finely diced
¼ cup Italian parsley, chopped fine
2 tsp salt
1/4 teaspoon Jamaican allspice (combination of cloves, cinnamon and nutmeg if you don't have)
1 teaspoon Bragg's Organic Sea Kelp Delight seasoning
1 cup whole grain bread crumbs (about 2 pieces of bread)
1 1/2 cups pecans, ground

Garnishes:
Green onions
Parsley
Lemon
Tomatoes
Kale or Baby Spinach

In a large stock pot, boil whole sweet potato with skin on 30-40 minutes till fork tender.
Remove from water and pulse in blender till smooth.
In a food processor (or you're awesome, do all Ninja blender) pulse pecans till finely ground, remove. Pulse bread till ground. {I make my own bread crumbs in batches then freeze in a Mason jar, cheaper and tastier than the store bought stuff}

Heat a skillet on medium heat, then add oil. Saute peppers and onions until browned and softened, about 2 minutes.

Combine sauteed vegetables, drained salmon (including the highly nutritious skin & bone),  parsley, salt and spices. Mix well.

Put bread crumbs and pecans in a shallow dish, sprinkle with a bit of salt. Form cakes in desired size, about ½ inch thick.
Cook in skillet at medium heat 3 to 4 minutes each side, or until well browned.

Serve on top of Raw Kale and with and a squeeze of lemon or lime if desired.

Bistro Sunday Brunch: Tarragon and Chive Roasted Potatoes and Garden Scrambled Eggs with Crema con Queso

Welcome Spring and all things light, lovely and green.
Good-bye mittens, blankets, soups and casseroles, thanks for keeping me warm and cozy.
I'll see you next Winter it's been grand.
The End.

In all fairness and honesty, I should mention that I live in Glendale, Az. The valley of the Sun so we don't have a true Winter to speak of. I did have to use my 'tushy' warmer in my car a couple of times and it was cold enough to make soup once or twice. Hey we're talking in the 30's people! That's freezing to us native desert rat's!

Really, I do sometimes wish for truer seasons. To experience big Autumn trees and snow on Christmas. But then I get over it and throw on my shorts and flip flops and head out to my backyard and pick some veggies in the warm, early March weather. What can I say? I love this place. Until June when it will be 120+ degrees  in the shade and life will suck big time and you can stop being jealous of us desert dwellers.

Right now however it is absolutely perfect outdoors and we are just soaking up every minute here in the valley. Windows open, cool breezes, baseball games, patio lunches and flip flops. My favorite thing about the coming of Spring is the lighter, fresher meals. More veggies, more salads, lemon aide and no-cook dinners.

Here is a wonderful Spring brunch to start of the season.
Add some lightly grilled asparagus and have this beautiful dish for Easter Day brunch.

Tarragon and Chive Roasted Potatoes and Garden Scrambled Eggs
with Crema con Queso

You know why. Just do it.

TIME  20 MINUTES      SERVES  4
Ingredients:

6-8 Free Range, Organic eggs
1 tablespoon half and half
1/2 teaspoon table salt
1/2 teaspoon French Grey Sea salt
2 medium russet potatoes, cubed
1 cup chopped broccoli florets
1 teaspoon olive oil
1 tablespoon dried Tarragon, divided
1 tablespoon fresh chives, chopped
Queso Cojita {Mexican crumbly cheese}
Mexicana Crema (can also use creme fraiche)
1 orange or yellow bell pepper, sliced

To Make:

Pre heat oven to 400F. Line a roasting pan with foil.
In a large bowl toss cubed potatoes with olive oil (just a teensie bit will do!) Spread Potatoes onto pan and sprinkle with salt and 1-2 teaspoons of the tarragon. Bake at 400F for 15-18 minutes till golden brown and fork tender.

In a medium saucepan over high heat bring 2 cups water to a boil. Add chopped broccoli. Cook just 2 minutes, no more. Drain, set aside.

Meanwhile, heat a non-stick skillet over medium-high heat, add small bit of butter. In a large mixing bowl whisk eggs and half and half. The half and half makes them oh-so-fluffy. Add a pinch of salt, pour into skillet. Using a rubber spatula, fold eggs over and over again till just set, about 3 minutes. Add broccoli, toss to combine.
Immediately remove from heat and serve with potatoes while still piping hot. Sprinkle with a bit more tarragon, the fresh chives, French Grey Sea Salt and freshly cracked pepper. Drizzle 1 tablespoon per serving of Crema Mexican over top of eggs. Crumble Queso Cojita over top of eggs. Serve peppers on the side.

French Grey Sea Salt.
Besides the amazing taste that you'll notice,
it's loaded with super minerals.
I save this for sprinkling on at the end so the minerals aren't destroyed during baking and to retain the flavour.
